Baztan Valley

There are many lovely, tranquil valleys in the Basque Country.  Baztan is one.  It is famous throughout Spain for its old ways and unspoiled beauty – a few new additions notwithstanding.

 

Baztan Valley, where your tour guide resides, is famously beautiful in an Idaho kind of way, peopled by shepherds, sheep, cattle, goats, and fine hills – except that Idaho is not studded with tiny medieval villages. The hiking there is splendid, the restaurants are inexpensive and well known for their large portions.

 

Cheese:

  • Right in town there is a fine cheesemaker.  One can visit.  The cheese is superb.

  • One can visit cheesemakers in their farmhouses on both sides of the border.

  • The best cheeses are 100% sheep’s milk – raw – but there is a nearby quesería (fromager) who makes a fine Camenbert style cheese.
